當品牌成長,空間如何回應? —— 風土與磚

小熊菓子創立於 2007 年,起源於彰化北斗。從一間街坊尺度的烘焙店,發展為今日擁有自主研發系統、中央工廠,並由近 300 人團隊支撐的專業烘焙品牌,北斗始終是其價值與精神的起點。

| 規模化後的品牌重校:從營運邏輯出發的「空間重組」此次新北斗創始店的更新,TaG Studio 創夏設計並未將其視為單純的翻新工程,而是一場根植於品牌邏輯的空間重組。基地本身為一棟全新毛胚建築,
提供設計團隊一個少見的條件——在不依賴懷舊或形式複製的前提下,重新回應在地脈絡。
設計並非從造型出發,而是始於研究。透過品牌發展脈絡、營運節奏與使用者行為的分析,空間被重新校準,使烘焙、風土與日常生活之間的關係得以被更清晰地理解。這樣的設計思維,亦呼應小熊菓子最具“代表性的產品之一——年銷千萬顆的「芙菲小圓餅(Fluffy Cookies)」,以法式技法結合台式風味,成為設計團隊在空間中思考如何平衡歐式工藝理性與台灣日常溫度的重要參考。
| 低碳美學的在地實踐:以「花壇磚藝」構築與土地的連結
室內動線經過重新梳理,以回應品牌成長後所帶來的高使用密度。現烤區、商品陳列與結帳流程被清楚分離,使採買過程回歸有節奏、可停留的狀態。建築外部則回應更日常的生活場景,黑色雨遮為接送孩子
放學的家長提供遮蔽;三、四樓規劃為員工宿舍,將工作、休息與照顧納入整體思考。在材料選擇上,我們大量使用來自彰化花壇的在地窯燒磚材,降低運輸距離,也讓建築在物理層面上與土地產生連結。
整體磚藝系統由台灣金牌磚藝職人許雍率領瓦力團隊完成,那螺旋向上的磚構牆面,呼應麵團在反覆揉製中逐層生成的過程,象徵時間與壓力所帶來的轉化。

| 感官引導的體驗轉換:讓空間成為「麥香」與「日常」的轉譯者
二樓的空間序列取材自彰化孔廟中「戟門、禮門、義路」的精神結構,轉化為當代廊道的節奏安排,使人在移動之間自然放慢步伐。整體色調以溫潤的「麵粉色」為基調,搭配具細緻顆粒感的牆面與橄欖樹銀白色的枝葉,形塑出安靜、內斂而可親的氛圍。清晨的光線透過拱形磚窗灑入室內,在牆面上留下緩慢移動的陰影;麥香,總是比語言更早抵達。

這不是一間用來宣示的旗艦店,而是一種持續的建築狀態——讓一個立足於地方、並具備國際辨識度的台灣品牌,透過空間,回到日常、承載時間,並自然地成為生活的一部分。

Founded in 2007, Bear Bakery originated in Beidou, Changhua. Having evolved from a neighborhood bakery into a professional baking brand with an independent R&D system, a central factory, and a team of nearly 300 members, Beidou remains the spiritual and value-driven starting point of its journey. | Scalable Brand Calibration: Spatial Reorganization Driven by Operational Logic For the renewal of the New Beidou Flagship Store, TaG Studio viewed the project not as a simple renovation, but as a fundamental spatial reorganization rooted in brand logic. The site, a new shell building, offered a rare opportunity: to respond to the local context without relying on nostalgia or formal replication. The design began with research, not form. Through an analysis of brand evolution, operational rhythms, and user behavior, the space was recalibrated to clarify the relationship between baking, terroir, and daily life. This philosophy mirrors one of Bear Bakery’s signature products—the "Fluffy Cookies," which sell tens of millions annually. By blending French techniques with Taiwanese flavors, these cookies served as a key reference for balancing European rational craftsmanship with the warmth of Taiwanese everyday life. | Low-Carbon Aesthetics: Local Practice through Huatan Brick Artistry Internal circulation was meticulously restructured to accommodate the high usage density following the brand’s expansion. The fresh-bake area, product displays, and checkout processes were clearly delineated, allowing the shopping experience to return to a rhythmic, lingering state. The exterior responds to daily life; a black awning provides shelter for parents picking up children, while the third and fourth floors serve as staff dormitories—integrating work, rest, and care into a holistic vision. In terms of materials, we utilized local kiln-fired bricks from Huatan, Changhua. This choice reduced transportation distance while physically anchoring the building to its land. The brickwork system was executed by the Wali Team, led by Taiwanese gold-medalist brick artisan Hsu Yung. The spiraling upward brick structures echo the process of dough being folded and kneaded—a metaphor for transformation brought about by time and pressure. | Sensory Guidance: Translating Wheat Aroma and Daily Life The spatial sequence on the second floor draws inspiration from the spiritual structure of the Changhua Confucian Temple—"Ji Gate, Li Gate, and Yi Road"—translated into a contemporary corridor rhythm that encourages visitors to slow down. The palette is based on a warm "flour-white" tone, complemented by textured walls and the silvery-white foliage of olive trees, creating a quiet, restrained, yet approachable atmosphere. As the morning light filters through the arched brick windows, casting slow-moving shadows across the walls, the aroma of wheat arrives long before language does. This is not a flagship store built for grand statements; it is an ongoing architectural state—allowing a local Taiwanese brand with international recognition to return to the everyday, carry the weight of time, and naturally become a part of life.
